Rava Upma.....!!!!!

Cooking is one of the recent areas of interests for my dad, developed after his retirement from the Govt services......Sweets like payasam( kheer) and a variety of chicken curries are his masterpiece recipes...Love the way he takes so much of patience in their making and proudly presenting them ( I have to admit that I dont have that much patience in cooking :) )......


Upma was often my last choice for breakfast until I tasted my dad's version ...He had prepared just a little for all of us and I was searching for more and got to see only the empty pan lying in the kitchen...What else to say about his tasty Upma !! No wonder that , Upma has now taken a place in my breakfast menu items. 

Here is the recipe for a simple Rava Upma from my dad.

Ingredients
  1. Coarse Semolina ( Rava )       - 1 cup
  2. Ghee                                      - 1 Tbsp
  3. Mustard seeds                        - 1 tsp
  4. Urad daal ( split black bean)   - 1 tsp
  5. Curry Leaves                         - 1 petal
  6. Onion                                    - 1 ( chopped )
  7. Ginger                                   - 1 tsp ( chopped)
  8. Green chillies                         - 2 ( chopped finely)
  9. Carrot                                   - 1 ( grated )
  10. Coconut                                - 2 Tbps (grated)
  11. Water                                    - 1 1/2 to 2 cups
  12. Raisins                                   - 10 Nos
  13. Cashew Nuts                         - 10 Nos 
Preparation
  1. Heat a pan and roast the semolina in it. Once it is light brownish in color, take out from flame and keep aside. 
  2. Now add little ghee and roast the cashews and raisins. Keep this aside for topping. 
  3. Add the remaining ghee to the pan and once hot, add the mustard seeds and allow them to sputter, followed by the curry leaves and urad daal. Saute till the daal turns brownish. 
  4. Add the onion followed by ginger and saute till the onion turn soft and brownish. 
  5. Meanwhile keep the water for boiling in another pan / kettle. 
  6. Once the onion is soft , add the grated carrot followed by grated coconut and finally the roasted semolina and saute for another few minutes. 
  7. Now its time to add the boiling water to this and keep stirring till the water gets absorbed. This happens very fast. So dont leave the pan without stirring till the upma turns to small chunks.

  9. Take out from the pan , serve on a bowl and garnish with the roasted raisins and cashews.
