No Bake Mango Cheese Cake...Eggless too

After much of waiting, Summer has finally arrived bringing longer days to enjoy outdoors...And along with it, the seasonal fruit, mangoes have also arrived to the markets...While enjoying mangoes the only fact that makes me a bit sad when I compare the summer vacations in India is about the quantity of mangoes which we used to enjoy...We used to get them in heaps whereas I need to buy them in numbers here.....Anyways as I always  keep in mind, Something is better than Nothing......And every time I go to the markets , there will be a few mangoes in my shopping bag...

Now that hardly a week left for my Kerala trip ,  pantry cleaning is on the go at home.....I had to finish up my cream cheese which was not a hit at home otherwise...So thought of trying out  some cake with it and this yummy mango cheesecake was the result........

Yesterday was Thrikarthika, the extension of Diwali festival for Kerala...It falls on the full moon day of 'Karthika' nakshathram [star] in the malaylam month of Vrishchikam[ Nov- Dec]......We used to decorate our houses with rows of lamps for this festival....It was a very pleasant evening yesterday with the full moon showering its cool light in accompaniment with the candle lights at our home....

Last day I was putting together all my recipes to make a Recipe Index...And then  I noticed the fact that being a Blog which is supposed to have more recipes from Kerala and being a hardcore fish lover myself, there aren't enough fish recipes here.. That made me think about the problem..

Mostly I prepare fish curries in the evening for dinner ...And then the lighting will be poor to get a good snap...So I will postpone, thinking to take a click in the morning, which never used to happen...

Then, I happened to visit this lovely Blog that demonstrates a simple and cheap DIY cake stand...After going through it, I simply coulnt wait to try it out myself...And here is the one I made, just by sticking together an old wine glass under a glass platter and keeping for sometime for the bond to form....And it was ready in no time waiting for a click...

It is exactly one year and one month since I had posted for the first time at Panchamrutham...It was mainly out of boredom [ which came whenever my little one was asleep and when all my house hold works were over ] , that I decided to start writing down my recipes at this space...Also, I never had the habit of book marking recipes, which made me waste a lot of time scratching my head for the successful recipe that I had tried before...Now that I have an online recipe book, I can easily come back and refer as required...

I didn't have any idea about this wonderful world of blogging while stepping into it...It is really a great experience learning from my fellow bloggers and to enjoy their visual treats...I am a great admirer of wonderful clicks... In fact that is the first thing that I look for than the recipe details...Still have to learn a lot to be more professional in photography...

Drumstick leaves [ Muringa ] are one of my favourites among the leafy vegetables...More than the awareness of the Nutritional benefits of these  leaves , it was merely the abundance of it in my home state of Kerala that made this leafy veggie my favourite...In Kerala you can find drumstick trees in almost every house and usually when we are running short of vegetables at home , we used to go and pluck some of these leaves and a healthy side dish will be ready in minutes......

I happened to visit this site of Haiti reconstruction and read this interesting article about growing Muringa trees in the new Haiti to prevent future iron deficiency...And below is the nutritional chart [ from the same site] of the drumstick leaves... Just go through it and I am sure it will make you tempted to grab a bunch of them the next time you find them in market...

Sometimes it is those missing tastes that tempts you to try out a recipe that you have never tried before...That was the case with my first attempt at making this Karnataka sweet, the Mysore Pak....I was never a fan of this sweet until I tried it from Krishna Sweets at Malleswaram (Bangalore) long back...It tasted so heavenly with a rich flavor of ghee....From then, i used to have it occasionally......Now, when you are miles apart and when you miss that taste what else to do than try your hand at it.. Right ?

Aviyal....Kerala's Mixed Veggie Delight !!

Aviyal is one of those Kerala Veggie items that I was'nt confident enough of making  perfect , as most of the traditional  vegetables  that are used to make them are not available here.......Recently recollected one of the stories behind the origin of this curry which goes like this.....One of the Kings of Kerala (Tranvancore) was bored of eating the dishes served in the daily menu & he challenged the Palace Chief Chef to quickly make him a curry that he had never tasted before...Poor chef went back to kitchen and found only the left over vegetables as he was already done with the day's cooking...So he took all the vegetables that he could find, cut them to thin strips, cooked them in water and added coconut, green chillies and curry leaves to it and named it Aviyal ....The King was completely Happy with the Dish it seems !!

Being a Rice producing state, the two main festivals of Kerala are related to the rice harvesting times...First one is Onam which falls in the Malayalam month of Chingam ( Aug - Sept) and the second is Vishu which falls in the month of Medam ( April- May)...Though the Malayalam calender starts with the month of Chingam, Vishu is also considered to be the beginning of a new year !!

Here is a beautiful video that my dear friend Gayathri had shared with me a few days back that made me really nostalgic of the Vishu days back home...The song is a very popular one on Vishu..It is worth watching !!

Though there are an ‘N’ varieties of payasams from the land of Kerala, when you hear the word 'payasam' it is this particular variety made using semia (vermicelli), that comes to the mind of any Malayalee as this is the most popular and easiest of all.
